Situated on the slopes of the Tecapa volcano in Usulutan, Los Pirineos is run by Diego Baraona, continuing a family legacy started by his father Gilberto. At 1,400 metres, the farm produces elegant, clean lots including the prized Elite Bourbon variety — named after the most mature Bourbon trees on the estate — and exceptional Black Honey Pacamara.

Los Pirineos operates the only World Coffee Research-certified Pacamara nursery on earth and maintains the largest private seed bank in El Salvador, with over 80 recorded varieties. Processing ranges from classic washed to carbonic maceration — a method the farm pioneered in El Salvador from 2017 onward through a partnership with World Barista Champion Saša Šestić. Drying happens on African-style raised beds positioned inside a natural wind tunnel formed between two volcanic peaks.
Sustentabilidade
The farm employs around 50–60 full-time workers year-round. Coffees are sold direct to specialty roasters — including Tim Wendelboe, La Cabra, and The Barn — without third-party certifications. Los Pirineos collaborates with Procafé on experimental plots dedicated to preserving rare native varietals and natural mutants unique to El Salvador.
