Chiapas, bordering Guatemala, produces the largest volume of coffee in Mexico and increasingly targets quality alongside quantity. Growing at the Sierra Madre de Chiapas range, coffees benefit from Pacific maritime influence and rich volcanic soils. A strong fair trade and organic movement here means many coffees carry certifications.

What makes it special

Chiapas cooperatives have been pioneers in Mexico's organic coffee movement, demonstrating that sustainable farming and excellent cup quality are not mutually exclusive.
